Early Upper Endoscopy During Food Reintroductions in Eosinophilic Esophagitis

(IRB#: IRB_00183050)

Eosinophilic Esophagitis (EoE) is a digestive disease that can occur due to food allergy and affect the ability to swallow. This study will learn more about how a persons body develops EoE for new medications and tests that can treat and identify EoE. People in the study will have already chosen to eliminate 1 or 2 foods to treat EoE with a doctor. Once participants resolve the disease with an elimination diet, the participant with the doctor will reintroduce foods (one at a time) to identify which foods are causing EoE. Each food reintroduction takes 6-8 weeks. Participants will have a follow-up endoscopy with biopsies after each food reintroduction as part of the standard of care. The study participation time will vary according to how many foods are removed from the participants diet. It can be as short as 6-8 weeks or up to 6 months, depending on having one or two foods removed and reintroduced. Medical tests will be done during the study to track the health of participants.
